Cooperativa Italiana di Ristorazione S.C. (CIR food) was founded as a catering firm in 1992 from the merger of three food cooperatives founded in the 1970s. Today, CIR is one of the largest and most influential food service companies in Italy, primarily serving schools, healthcare facilities, and company cafeterias. The company focuses on the quality and safety of food service and the preservation of food traditions.
Keeping Up With Growth and Surviving Earthquakes
As an operator of more than 5,500 cafeterias and restaurants with nearly 11,000 employees, CIR food’s two main expenses are staffing and food. Properly managing both is an absolute must to ensure positive customer experiences and the timely delivery of healthy meals. But optimizing labor costs and minimizing food waste requires timely, accurate forecasting.
Rapid growth was making it difficult for planners to eliminate cost overruns, and properly staff at levels that would be cost-effective and deliver outstanding customer service.
The challenges became particularly acute after a series of earthquakes struck northern Italy in 2012, and forced the temporary closure of 100 CIR food facilities in the provinces of Modena, Ferrara, Mantua, and Reggio.
CIR food needed to update the infrastructure on which they had been running their enterprise resource planning (ERP) and business intelligence (BI) solutions because rapid growth was slowing the existing system unacceptably. Because CIR food is an existing customer using SAP solutions for planning, supply chain management, and business intelligence, SAP recommended migrating to the SAP HANA in-memory computing platform.

With SAP HANA implementation partner B4C Consulting, CIR food and SAP targeted multiple areas for improvement, including the collection and analysis of company data, and the speed and accuracy of business forecasting. By adding SAP Predictive Analysis software, CIR food has the ability to improve the precision of their staffing and supply chain management by mining and analyzing BI data to drive smarter, more strategic decisions. CIR food also sought to reduce reliance on IT personnel by enabling self-serve tools for reporting on mobile devices, such as smartphones and tablet computers.
The budgeting process now takes 77% less time than it used to, thanks to the implementation of SAP Business Planning and Consolidation (SAP BPC) on SAP HANA. The budget used to take nearly five months to create. Now it takes only one month. Additionally, by empowering users with self-service options for both office and mobile devices, there has been a 4,000% increase in the number of daily users of business intelligence tools.
By implementing mobile solutions powered by SAP HANA, data queries from employees using iPads have been reduced from three minutes to one second. That’s an improvement of 99.44%.

Predictive analytics are also being used to optimize staffing. By examining data with SAP Predictive Analysis software, CIR food can reduce expensive overstaffing when facilities aren’t busy and eliminate customer service and quality issues that can be caused by understaffing.

The company generates approximately 500 million restaurant tickets annually. CIR food is fine tuning their planning and forecasting system to ensure that all facilities have all the data they need to make informed decisions regarding purchasing and human resource allocation. The increase in user independence has greatly reduced the reporting responsibilities of the IT department, enabling those employees to focus on higher value activities.
More Mobility on the Horizon
Next on the horizon for CIR food, will be the continued rollout of self-service business intelligence. The rapid adoption of mobile technology will help CIR food staff be more responsive, which should improve the overall hospitality customers experience when they dine at a CIR food facility. Additionally, CIR food will begin optimizing supply chain operations for healthcare facilities and company cafeterias, hoping to achieve results similar to what they are gaining with their school service.
